How the Blog was Born

Hi, my name is Geri and I'm a reformed Gluten Eater. I've been Gluten Free for over 4 years now, and I'm hanging on! In fact I'm such a Gluten Free fanatic that I'm sure I irritate my friends with all my "this is why gluten is bad for you" talk! But I have had a few friends want to jump on the wagon with me, so this is for them. I decided it might be easier to have my recipes in a place where they could get them instead of waiting for me to email them!! And it gives me a venue to talk all I want about the evils of gluten, and traditional medicine, and artificial sweeteners and so on and I will never know if you tune me out!! So that is How the Blog was Born. Whether it dies or not...we shall see....well I don't think you can kill one of these things, so I guess it's here to stay. If you want some ideas and recipes on how to eat Gluten Free, and how to keep your kids and yourself out of the doctors office then feel free to join me!! And if you have things to share, please comment and I'll add it on!!

Enjoy the Journey!!

Cinnamon Pull Aparts

Since Gluten Free Bread is not like Bread Bread you can't make cinnamon rolls the traditional way.  It is more the consistency of banana bread.  So what I do is I use a bundt pan and spray it really well.  Make a batch of GF white bread.  Take your brown sugar, cinnamon, a package of dry butterscotch pudding and hard butter  and cut the butter into it like you would a pie crust.  (amounts vary so just play with it. I use about 1/4 C of butter)   Put some sugar mixture into the bottom of the bundt pan and then add small drops (like with a spoon) of dough.  Each layer add sugar mixture.  Keep dropping till it's 1/2 filled.  Add the remaining mixture to the top then let it raise in a warm oven for 25 min and bake for about 40-45 min.  You just have to watch it.  Just make sure you have enough sugar mixture to cover all the dough.
Tip them over onto a round plate that is larger than your pan so the gooey stuff can have a place to go!  Be brave!  Wing it!  See what happens!!

Brownies

The wait is over.  This blog has been missing one of the most important staples to any gluten free diet.  Well, I'm finally adding it to make things complete....Brownies.  Ooooey, goooey, yuuuummmmmy brownies.

Follow the recipe exactly and you will love the results!  If you are like me you will just start throwing the ingredients into a bowl and start mixing.  So I'm going to give the instructions while we go.  It's taken me years to perfect these, and I want you to get it right the first time!!

Use a big bowl and a wooden spoon.  Hide the mixer. Preheat oven to 350
2 Cubes of soft butter  (that's 1 Cup).  It's best that you anticipate making these and put your butter on the counter.  Microwaved butter always messes the delicate balance of the mixture!!  :)  We keep several pounds of butter on the counter at all times!
2 Cups of Sugar
Mix these 2 together SLIGHTLY,  just till the sugar is moist but not creamed
4 eggs
2 tsp vanilla (did you know that you can get Mexican vanilla at the Mexican tiendas in town??  True story,   and there is NOTHING better than Mexican Vanilla - as far as Vanilla goes...)
2 Tbls Light Corn Syrup

Mix these ingredients only SLIGHTLY again.  Till eggs are mixed in.  You will see chunks of butter and maybe egg....don't keep mixing!

In another small bowl combine your dry ingredients well.  You want the xanthan gum to be mixed well into the flour.

1 C GF Baking Flour Mix (the one using the Asian White Rice Flour) *see GF Flour Mixes for info
1 tsp xanthan gum
3/4 C baking cocoa (I prefer the one in bulk at Winco over the Hershey's.  The one at Winco is a little darker and richer.)

Add to your wet ingredients and mix SLIGHTLY.  Just until you can see that all the dry is mixed into the wet.  The less you stir the better.  It will make a smooth batter but as soon as it is smooth stop stirring.  And  be careful not to eat all of the batter before you get to cook some or you won't know why you didn't stir it too much!

Lightly spray your pan.  I like to use my Pampered Chef Rectangular stone.  It makes the brownies thinner.  So a smaller cookie sheet would work too.  (Not the big jelly roll-too big)
or a 9x13 works too.  For the thinner brownies bake 20-25 min.  Watch closely.  Edges should be slightly browned.  9x13 bake for 30-35 min.  check center with a knife.  Should be clean.
Try to let them cool before digging in.  It takes will power!!

Banana Bread

1/2 Cup butter softened
1 C sugar
2 eggs
1 C mashed, really ripe bananas
1/4 C milk
1 tsp lemon juice

2 C  Featherlight mix  (For healthy breakfast muffins use instead- GF Flour Mix + 1/4 C flaxseed meal)
2 tsp xanthan gum
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 Tbls cinnamon
1/2 C chopped nuts

Mix sugar and butter until blended.  Make sure you use a bowl and wooden spoon - NOT A MIXER.  Add eggs one at a time and blend.  Add bananas milk and lemon juice and stir till blended.

Mix dry ingredients well and then mix in to wet ingredients.  Add nuts if you would like.  The key is not to beat or mix too much.

Pour into bread pan or muffin tins.  Makes 1 loaf.  Bake @350 for 50 minutes.  check with knife in the middle.  Depending on how your oven bakes it may need more or less time.  Gluten free flour generally takes a little longer than normal flour to bake!
Enjoy!! mmmmmmm

Where Do I Get It NOW?

WALMART!  Hooray for Walmart!  They now have a gluten free section.  At the Nampa, Greenhurst Walmart  it is on the isle with the Asian, and Latino foods.  It's small, but it's something.  My Albertsons across the street also has a small Gluten Free section so if I can't find it at Walmart I go there!

They have pasta, cookies, crackers, pretzels, Oats, box mixes.  They have a few of the flours like the Brown Rice Flour and Xanthan gum.  Sometimes they have the Potato Starch but not always.  I still get my Tapioca Starch at WINCO in the bulk section.  I also get my Xanthan gum there in bulk.  I think its the cheapest.

I have some friends that go to Seattle occasionally.  They stock me up on Trader Joes Gluten Free Pasta!!  It's the best price and I love their pasta!!  So if you have a Trader Joes connection, USE IT!!

Happy Shopping!!

Substitute for Creamed Soup

I thought I would put this on as a separate post.  I know I put it in a dinner recipe, but this is my standard filling for most casseroles, gravies, whatever.  I use this now instead of Cream of Chicken, Mushroom, Celery, Soup.
It's easy and fast and much better for you!!

In a pan add 1/4 C (1/2 cube) of butter or coconut oil.  Let it melt on low to medium heat.  When it's melted add 1/2 cup brown or white rice flour.  I like to use a whisk, so whisk it in and let it cook for a minute or so.  Slowly start adding milk or chicken broth until it gets to a thick gravy consistency.  Take it off the heat.  This is where I get creative.  Depending on what I'm making I might thin it some more with Chicken broth.  Or add more milk and some mayonnaise or sour cream. Season it with salt and pepper, or garlic salt and lemon pepper, or salt and curry powder.  Play with the amounts for what you need for your family!  Remember I usually super size things!!
You can also add mushrooms or celery or chicken for a creamed soup!

Some meals I use it for:

Chicken and rice, Hawaiian Haystacks.  Add the gravy to your chicken you've cooked in the crock pot all day or that you've just cooked on the stove.  Serve over rice.  Add condiments for Hawaiian Haystacks if you want!

Chicken, broccoli, rice casserole.  Layer cooked rice in the bottom of a 9x13 pan.  Put cooked, diced chicken on top of the rice, just barely steamed broccoli on top of the chicken, then pour the gravy with curry powder and mayonnaise over the top.  Top with grated cheddar and bake for 20 minutes!  YUM!!

Add a block of cream cheese and about 3/4 cup of Parmesan cheese and make an Alfredo sauce to go over gluten free fettuccine.  Add chicken if you'd like.

Tuna Noodle Casserole.  Make the gravy,  add chicken broth, garlic salt, lemon pepper, dill, and 1 or 2 cans of tuna.  Add pasta.  Mix together and top with grated cheddar and crushed potato chips!  I would add peas but my kids hate them!! I usually make a side of peas for me to add in!!

Pancakes or Waffles

GF Pancakes or Waffles
These work as pancakes but I use the exact recipe for waffles, which my kids like better!

2 C Featherlight Mix
1 tsp Xanthan gum
5 tsp baking powder
1/2 tsp salt
1/4 C ground flax seed (flaxseed meal)

mix dry ingredients together
2 1/4 C milk
5 Tbs oil
2 eggs

Put eggs and oil in a large mixing bowl.  DO NOT MIX.  Put dry ingredients on top and start to mix slowly, adding the milk.  Mix  minimally. Add about a tsp of vinegar to mix.  Leave the batter lumpy.

Cook on a warm griddle until bubbles appear on the surface.  Flip and cook.  They take a little longer to cook all the way through so be patient!!  Waffles take about 4 minutes.

GF German Pancakes

GF German Pancakes

Preheat oven to 425

1 Cup Featherlight mix
1/2 tsp xanthan gum
1/4 C sugar
1/2 tsp salt
1 C milk
4 eggs beaten
Mix dry ingredients together.  Mix eggs and milk together then pour over your dry ingredients and mix well.
Put 2 Tbls of butter in a 9x13 pan and put in the oven for about 2 minutes until it is melted.  Tilt the pan to cover the bottom with butter then pour in your ingredients and bake for about 18-20 min.  The top that puffs up high might get a little burnt but it needs to cook all the way through!  Remember, for some reason, cooking with gluten free flours takes a little longer than regular flour.

Serve with butter and syrup!  (I don't add either.  I think it is yummy just plain!)

OPTIONS:  you can top this with cinnamon and pecans.  You could also add diced peaches.

More GF Shopping

Guess what folks!! Incase you haven't noticed on your own, Walmart has come on board the GF bandwagon!!  They have a tiny little section of Gluten Free foods.  The best part of it is their pasta!!  It is pretty inexpensive!!  (comparitively speaking!)  You can get spaghetti, penne, elbow and lasagne that I know of.

In MY Walmart (in Nampa) it is located in the section with the specialty foods, like the Asian food.  Seems like a strange place, but I managed to find it!  So check it out!
Let me know if anyone finds any other places that are carrying stuff!  It's great that it is getting easier to find.

I also order from Azure Standard online.  If anyone is ever interested in ordering bulk, let me know. It's best to order together because you need to have minimums and we can share shipping.  They have pretty good prices. They have all the flours, plus pasta and plenty of other things.  You can go to their website, azurestandard.com and check it out.

Happy shopping!!

Berry Cream Pie

Okay, start by making 2 fabulous GF pie crusts.

For the cream pie filling:
1 16 oz cool whip
8 oz pkg cream cheese (softened)
1 cup powdered sugar.
Beat together really well.

Line your baked pie crust with a thin layer of the cream.  Save most of it for the top though!

Add whatever berries you want.  You can do canned pie filling (cherry, blueberry, etc...)  but my favorite is to take frozen straweberries, raspberries or the mixed berries you get at costco.  The strawberries you have to cut up of course but the mixed berries are ready to go, just throw a little sugar on them (not too much) and  let them thaw out for awhile.    This is what I do.
Boil 1 cup sugar, 1 1/2 cups water and 1 Tbls of Cornstarch.  ( I add the cornstarch to my cold water before I boil it.  Bring it to a boil and it will thicken.  Then I pour it over my berries and add it to my pie!
You will want to put the pie in the fridge to cool down for awhile before adding the rest of the cream to the top.  It will be easier to spread the cream.  But if you are in hurry then just layer it on!  It will be nice and colorful!!  I've done it both ways. Either way tastes delicious!

GF Pie Crust

I've never been much of a pie fan.  My mom always said she made the best pie crust around, and I guess comparitively speaking it was pretty good...for pie crust.  I could take it or leave it...I mostly left it!
Until now!  HOLD THE PHONE!  This pie crust is soooo good!  I actually like pie!! I actually MAKE pie!  And the real clencher - my husband likes it!  I have my friend, Felicia, to thank for this pie crust.  She found it, so I can't take credit.  But I will put it on my blog for all to enjoy!  It is fantastic!!

GF Pie Crust

3/4 C Brown Rice flour
1/4 tsp sea salt
1/2 tsp xanthan gum
1/3 cup butter (room temp is fine but not too soft)
1 tsp honey
2 Tbls cold water

Stir flour, salt and xanthan gum together really well.
Cut in butter.  Add the honey and stir with a fork.
Add the water a little at a time until a ball is formed. Don't mix it too much.
Roll out the dough between two sheets of wax paper (or aluminum foil)
Peel off one side then set the dough back down on the paper.
Flip it and peel the other side off.  Then flip it into your pan. It's easier to peel it before you put it in the pie plate! This is really flakey dough so just push it back together when it tears!
This makes a 9" pie.  Poke holes in the bottom with your fork and
bake @350 for 15 minutes or until brown.
Now go make a yummy pie!!  Tell me how it goes!

Pumpkin Bread

Okay, another of my favorites at the holidays is that amazing smell of Pumkin Bread!  MMMMM I can smell it now! Oh that's cuz I just made some!!  :)
I took my original gluten FULL recipe and lowered the sugar and the oil and made it gluten free and even better than before!!  It is amazing! (if I do say so myself!)

Okay, I better tell you first, this batch I make is a jumbo because that is how I have to bake for my family!  So you can 1/2 it if you want, or just make extra for your friends and neighbors!

Pumpkin Bread
1 large Can pumpkin (stick to Libby's, it really has the most flavor!)
1/2 C ground flax seed (you can get it at Costco now! also called Flax meal)
3/4 C oil
1 C applesauce
2 1/2 C sugar
5 large eggs
1 tsp vanilla (mexican vanilla is best!)
Mix that really well. Then add dry ingredients:
4 3/4 C gf flour mix.  (I usually use 1/2 brown rice mixture and 1/2 rice powder mixture, or use all brown rice mixture because the rice powder mix makes it too fine.)
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 1/2 tsp salt
1 Tbl each - ground cinnamon, nutmeg, and cloves

This makes 3 large loaves or 6 medium. I got some disposable medium size pans at Walmart that I reuse. I also make muffins with them.

Bake @ 350 for about an hour.  The large loaves take an hour.  The smaller I start checking at 50 minutes, but remember it always takes things made with rice flour longer to cook than normal!  so don't worry!
muffins take about 15-20 minutes.  minis take about 12. ENJOY!

Holiday Baking!

It's the holidays!!  My favorite baking season!!  And let me tell you, you can make some AMAZINGLY DELICIOUS goodies for the holidays!  I've been looking for a minute or two to share some of my favorites with you!   But what to start with...hmmmm.  Well, at our house, when we went gluten free, we started in the month of April.  I was doing fine, learning to make some good treats and I really didn't miss very much.  But then, the holidays came! And with the holidays comes a tradition in our family....Dad's sugar cookies!  He makes them, bakes them, and decorates them.  Well, he lets the kids help, but he doesn't just frost them, he literally decorates them!  So not only are they delicious, but they are beautiful! And we aren't just talking at Christmas!  For the Super Bowl he makes helmets with both teams colors and names on them.  At Halloween, we get ghosts, cats, pumpkins.  At Thanksgiving we get Turkeys and Pilgrims.  And of course at Christmas we get everything Christmassy!!  Even stockings with our names on it!!  I thought I was going to die with the first batch!  So after feeling sorry for myself, I got to work!!  And now, Dad still makes his, but we also have Mom's sugar cookies!!  They may not be as beautiful (I'm not quite as patient as Scott!  That's why he decorates all the birthday cakes too!!) but they are delicious!!  So for nestagia's sake, I will start with sugar cookies!
Here is a picture of Scott's that he just made to send to our son, Tyler, who is on a mission in Guatemala.

Mine are equally FANTASTICAL,  I believe!

Gluten Free Sugar Cookies
3/4 C shortening (even tho I am NOT a fan of shortening, it makes a difference if you don't use it!)
3/4 C butter softened
2 C sugar
4 eggs
2 tsp vanilla (mexican vanilla being my favorite!!)
Mix well, then add dry ingredients
5 C gf baking flour made with the RICE POWDER!  very important!!  if you don't know what that is, refer to the post about the baking flours.
1 Tbl xanthan gum
1 Tbl baking powder
2 tsp salt
Mix together well.  Dough should be sticky.  Refrigerate 1 hour then roll out and cut!
Bake @ 400,  6-8 min

We frost them with your basic powdered sugar frosting.
A little butter (like a tablespoon maybe), a little milk,  a swig of vanilla and enough powdered sugar to make it thick!   ENJOY!!

WHITE BREAD - making it a little healthier!

White Bread - a little healthier!!

Okay, this is my latest go with my white bread. I like to try new ways to make it more healthy but make sure it still works out well. This one is great! I've only changed 2 things. I'm using honey instead of sugar, and millet flour instead of extra tapioca flour. So here is the new recipe:

Gluten Free White Bread

In mixer put:

3 C GF flour mix

1/2 C millet flour

3 1/2 tsp. xanthan gum

1 1/2 tsp salt

Mix together quickly then add on top - DO NOT MIX IN

1 1/2 Tbs yeast

In a seperate bowl mix together

1 ¾ C warm water

¼ C oil

¼ C honey
1 tsp rice vinegar (i use white or apple cider vinegar)

Pour this mixture on top of yeast and let it sit for about 3 minutes or until the yeast gets bubbly

Then add 3 eggs and mix. Scrape the sides and mix on HIGH for 5 minutes.

You can make 2 smaller loaves (for this I use my glass loaf pans) or 1 larger loaf (for this I use my stone loaf pan). I just like to make the smaller loaves. I feel like my kids don't waste so much bread that way!!
Spray your pans with pam and divide the dough among the pans. Put in a warm oven (170) for 30 minutes to rise. Then don't touch the pans, but turn your oven to 375 and bake for 40 minutes. When its done take it from the pan immediately and cool on a rack. Rub the top with butter. Let it sit atleast 15 minutes before trying to cut into it!

If your bread sinks, then you aren't mixing it enough. My bosch is really powerful so it's getting mixed well! If you have another mixer you may just want to mix it a little longer.

Mexican Chicken over Rice

Oh my jeepers!  I made the BEST dinner!!  It's always a toss up when I try something new if anyone will eat it or not.  I never use a recipe, I usually just start throwing things together!  At my house I rarely venture from the mundane, everyday list of meals my family will eat!  But this day all started when my daughter wanted a can.  A can you say?  Yes, she was fixing up her locker (that we have out in the garage) for school and she needed this little can which happened to have green chilies in it.  So I told her to go ahead and open it and I would use it for dinner!!  PLUS - now this is the bonus - I have been putting zuchinni in EVERYMEAL for the last few weeks!!  No one knows and it's a great way to use it!!  I usually put it in my little food chopper and chop it up fine.  I stick it in hamburger, in my tuna noodle casserole (no joke!) and everything!!
So this is what I did...(and EVERYONE loved it and ate every drop!!)

Start with a crock pot -
put in 4 or 5 chicken breasts (I have 9 kids at home eating plus Scott and I and that's what I use)
throw on the green chilies
chop up an onion, zuchinni, peppers (the last of the little sweet peppers I had in my bag) and throw that on top of the chicken.  Then I poured on a little salsa (homemade by my husband!!) and then put in enough water to almost cover it all.  I threw in 4 chicken bouillion cubes (gf ones I get at winco).
I started it about 1:00 in the afternoon and it cooked all afternoon on high.
Then right before dinner I made a roux.  I used about 1/2 a cube of butter.  But I accidentally burned it!  I was so bummed!!  But did you know that burnt butter doesn't taste burnt?  So guess what?  I actually used it!  I then put in about 1/2 cup of rice flour and stirred it for a couple of minutes.  Then you slowly add milk to make a roux as thick as you would like.  But then I added that to the sauce in the crock pot.  I took the chicken out to cut it up into little peices ( or shred it) and made the sauce then added it all together!  It was yummy!
I served it over rice with quinoa.  I put1 cup quinoa and 3 cups rice in my rice cooker.  I did just white rice.  It is so yummy with the quinoa.  cook it the same as you would regular rice!  It's great!!

It really was yummy (did I say that already?).  You can use it as the insides of chicken enchiladas too!  That was the plan but I ran out of time.
Anyway, good stuff!  If you don't try it, atleast I now have it written down for posterity!!

Monster Cookies

These cookies are the greatest gluten free cookies ever!!  Because they aren't just gluten free...they are flour free!!!  Okay, I guess I better do a disclaimer.  Now remember, oats aren't technically "gluten free".  You can buy gluten free oats tho.  So this recipe is great if oats don't bother you!  They don't bother us and we eat WAY too many of these!!!!  Maybe someday I'll add a picture!!!
Another hint - you need a powerful mixer to make these.  You will burn up a regular mixer on these.  I use my bosch with the cookie paddles.

Just add the ingredients in order and mix as you go.  This is a HUGE batch!  If you don't have 10 kids like me, and you are just making them for the fam, then I suggest you 1/2 this recipe!

MONSTER COOKIES

6 eggs
2 C brown sugar
2 C white sugar
1 1/2 tsp vanilla
1 1/2 tsp karo syrup
4 tsp baking soda
2 cubes butter
3 C peanut butter (I sometimes use some Nutella- yum!)
9 C oatmeal
12 oz bag of M&Ms (you can use just choc chips too)

When I don't have M&M's I use choc chips, butterscotch chips and white choc chips together!!   That's my favorite!!

When it is mixed well, drop onto cookie sheets and Bake @350 for 9-11 min.   ENJOY!!

Some Healthy Information!

Not exactly sure where the article came from, but this is all stuff I have known.  Hope you not only take the time to read it, but take some thought as to whether or not you feel it is worth the little changes it takes to bring about big changes in your body!!

EATING FRUIT...

We all think eating fruits means just buying fruits, cutting it and just popping it into our mouths. It's not as easy as you think.. It's important to know how and when to eat.

What is the correct way of eating fruits?

IT MEANS NOT EATING FRUITS AFTER YOUR MEALS! * FRUITS SHOULD BE EATEN ON AN EMPTY STOMACH.

If you eat fruit like that, it will play a major role to detoxify your system, supplying you with a great deal of energy for weight loss and other life activities.
FRUIT IS THE MOST IMPORTANT FOOD.Let's say you eat two slices of bread and then a slice of fruit. The slice of fruit is ready to go straight through the stomach into the intestines, but it is prevented from doing so if you eat the bread.
In the meantime the whole meal rots and ferments and turns to acid. The minute the fruit comes into contact with the food in the stomach and digestive juices, the entire mass of food begins to spoil....
So please eat your fruits on an empty stomach or before your meals! You have heard people complaining — every time I eat watermelon I burp, when I eat durian my stomach bloats up, when I eat a banana I feel like running to the toilet, etc — actually all this will not arise if you eat the fruit on an empty stomach. The fruit mixes with the putrefying other food and produces gas and hence you will bloat!
Graying hair, balding, nervous outburst, and dark circles under the eyesall these will NOT happen if you take fruits on an empty stomach.
There is no such thing as some fruits, like orange and lemon are acidic, because all fruits become alkaline in our body, according to Dr. Herbert Shelton who did research on this matter. If you have mastered the correct way of eating fruits, you have the Secret of beauty, longevity, health, energy, happiness and normal weight.
When you need to drink fruit juice - drink only fresh fruit juice, NOT from the cans. Don't even drink juice that has been heated up. Don't eat cooked fruits because you don't get the nutrients at all. You only get to taste. Cooking destroys all the vitamins.
But eating a whole fruit is better than drinking the juice. If you should drink the juice, drink it mouthful by mouthful slowly, because you must let it mix with your saliva before swallowing it. You can go on a 3-day fruit fast to cleanse your body. Just eat fruits and drink fruit juice throughout the 3 days and you will be surprised when your friends tell you how radiant you look!

KIWI: Tiny but mighty. This is a good source of potassium, magnesium, vitamin E & fiber. Its vitamin C content is twice that of an orange.
APPLE: An apple a day keeps the doctor away? Although an apple has a low vitamin C content, it has antioxidants & flavonoids which enhances the activity of vitamin C thereby helping to lower the risks of colon cancer, heart attack & stroke.
STRAWBERRY: Protective Fruit. Strawberries have the highest total antioxidant power among major fruits & protect the body from cancer-causing, blood vessel-clogging free radicals.
ORANGE : Sweetest medicine. Taking 2-4 oranges a day may help keep colds away, lower cholesterol, prevent & dissolve kidney stones as well as lessens the risk of colon cancer.

WATERMELON: Coolest thirst quencher. Composed of 92% water, it is also packed with a giant dose of glutathione, which helps boost our immune system. They are also a key source of lycopene — the cancer fighting oxidant. Other nutrients found in watermelon are vitamin C & Potassium.

GUAVA & PAPAYA: Top awards for vitamin C. They are the clear winners for their high vitamin C content.. Guava is also rich in fiber, which helps prevent constipation. Papaya is rich in carotene; this is good for your eyes.

Drinking Cold water after a meal = Cancer! Can u believe this?? For those who like to drink cold water, this article is applicable to you. It is nice to have a cup of cold drink after a meal. However, the cold water will solidify the oily stuff that you have just consumed. It will slow down the digestion. Once this 'sludge' reacts with the acid, it will break down and be absorbed by the intestine faster than the solid food. It will line the intestine. Very soon, this will turn into fats and lead to cancer. It is best to drink hot soup or warm water after a meal.

A serious note about heart attacks HEART ATTACK PROCEDURE': (THIS IS NOT A JOKE!) Women should know that not every heart attack symptom is going to be the left arm hurting. Be aware of intense pain in the jaw line. You may never have the first chest pain during the course of a heart attack. Nausea and intense sweating are also common symptoms. Sixty percent of people who have a heart attack while they are asleep do not wake up. Pain in the jaw can wake you from a sound sleep. Let's be careful and be aware. The more we know the better chance we could survive.

A Time to Heal

I believe that the first step to true happiness in this life is Healing.  Healing our bodies, our minds, and our Hearts.  Most of us know where we need to heal, but often don't know how or where to start.  I think that's why God gave us each other.  I know I wouldn't be here today without the special people in my life that have directed my path.

I believe that first and foremost we must heal our hearts spiritually.  Maybe that means we need to forgive someone, or let go of something we've been carrying for a long time.  Maybe we need to draw closer to our Savior through prayer and scripture study.  Maybe we need to get outside of ourselves and serve.  Or maybe we need to learn to love ourselves for who we are and find more gratitude to God for the gifts He has given us.

The Second step in healing is helping our mental self.  Eating right is not only physical but has mental benefits.
The third step is physical.  Exercise, eating healthy, and using the things that God has given us on the earth to heal our bodies and our minds.  What a blessing it is to have Health.

Chocolate Bundt Cake and Frosting

Okay, this is a chocolate cake, plain and simple, but my favorite way to bake it is as a bundt cake!! It's so pretty!!  But anyway you bake it, it is delicious!!!  Friends love it and always say, "Wow!  This is gluten free?"  I love those 4 words!

Chocolate Cake
2 eggs  - put in mixer and start mixing eggs while you get the sour cream ready, then add:
1 C sour cream
1/2 C oil
2 tsp vanilla
Mix this well, for about a minute then add dry ing.
2 C GF flour mix (using the Asian white flour)
1/2 tsp xanthan gum
2 C sugar
3/4 c. cocoa
1 1/2 tsp baking soda
1 1/2 tsp baking powder
Mix well, scraping the side and bottom of bowl for about a minute.
Then add 1/2 C boiling water slowly while it is mixing.  Mix for one more minute.
Spray your bundt pan (or whatever pan you want) well and add the mix and bake!
350 degrees
Bundt pan - 50 minutes
9x13 - 35-40

When it's done I flip it over and let it cool about 15-20 min (sometimes we can't wait that long!!)
Here is the frosting recipe.  I like to make it thin and pour it on.  If you want it thicker just add more powdered sugar.

Chocolate Frosting
2 Tbls butter - melt in small saucepan over med heat.   When melted add:
1/4 c granulated sugar - stir (I use a wisk) for about 30 seconds so the sugar melts. Take off the heat.  Add:
2 Tbls cocoa and mix well.  Then add:
2 Tbls milk and mix.  Then add:
1/4 powdered sugar and wisk really well until all the lumps are gone.
Pour over your cake and sprinkle with a little powdered sugar if you like!!  or sprinkles are fun too!!  In fact if you want you can just sprinkle the powdered sugar and not add frosting!
Enjoy!

GF White Cake

Okay, I hate to brag....but...I made the BEST white cake in the world for my sons birthday!!!  I took a recipe that I have made that was okay, and tweeked it and everyone kept asking, "Is this really gluten free?"  My husband kept saying, "What happened?  This is great!"  I just love it when that happens!!!  So here goes!!  The worlds best Gluten Free White cake!  (okay, maybe just the best in MY world!!)

Geri's Best Little White Cake Ever (you have to know Richard Scarry to appreciate that!)
Preheat oven to 350

1 C sugar
1 cube of butter, softened - cream together and add
3 eggs
cream together for about 2 minutes (important!!)  then add:
1 C sour cream
1 tsp pure almond extract and mix thoroughly

Add: 2 C GF Baking flour mix (you have to use the mixture with the ASIAN white rice flour or it doesn't work!!)
1/2 tsp xantan gum
1 tsp bkg powder
1 tsp bkg soda
1/4 tsp salt
mix everything together, scaping bowl often.  Then while it is mixing slowly add 1/2 C boiling water and continue mixing for about 1 min.  *To make a thinner cake in a larger pan, don't add boiling water.
Mix on high for 2 minutes.

Spray a 9x13 pan and pour batter evenly into pan.  Bake 25-30 min.  (if your oven cooks hot check after 20 but make sure it is completely done on the inside!!   Better a little more done than underdone)

I make my own frosting from just butter, milk, and powdered sugar!!  I just throw it all in and mix so I'm not really good for a recipe on that one!!  Frost with whatever you like!!  Oh so yummy!!  ENJOY!!

** I like this recipe for a raspberry (or whatever fruit) cream cheese cake.  I make it in a larger pan with sides and so it is a little thinner.  I mix a brick of cream cheese, a cup of powdered sugar and a carton of whipping cream (already mixed up) and that is the frosting.  Then I put raspberries in syrup plus fresh raspberries on top. YUM!
